Blueberry Peach Cobbler

Filling:

1 pound frozen peaches cubed

1/2 pound frozen blueberries

1 tsp cinnamon

2 TBS lemon juice

Zest of one lemon

1/4 tsp salt

Topping:

1.5 cups old-fashioned rolled oats (gluten free if desired!)

1 cup almond flour

1 cup chopped walnuts or pecans

1/2 tsp cinnamon

1 TBS honey

1/8 cup grade A maple syrup

1/4 tsp ginger

1/2 cup coconut oil (melted)

 

Preheat oven to 400 degrees F.

For the filling, combine the ingredients and gently mix together. Pour into a 9×9 square baking dish.

For the topping, combine the ingredients and stir until well incorporated. Sprinkle evenly over the filling. Bake until the top is golden brown and the fruit is bubbling, about 20-26 mins.
