Don’t get me wrong, I love a good kale salad. But sometimes, they get a little boring. This is my sweet and tart take on the classic kale salad! Trust me, it’s sure to get your whole family eating their greens.
Ingredients
Cinnamon roasted butternut squash (see recipe here)
Paprika roasted chickpeas (see recipe here *I used 1 can of chickpeas and sweet paprika*)
Cinnamon tossed pecans (purchased from Central Market)
Raw pumpkin seeds
Champagne dijon vinaigrette (see recipe here)
And last but not least, a whole lot of kale!
