EXTREME DUATHLON

One of my hardest races when I was 11. It consisted of a 5 mile hilly trail run, 16 mile bike, 2 mile trail run and then a race straight up the top of Enchanted Rock.

SMALL, BUT STILL OPEN WATER CHAMP

Contrary to assumption, I got my dad into the sport WITH ME when I was 12. The inaugural year of the open water Spring/Fall Classic.

ONE YEAR INTO MY CAREER AGE 8

My mom still was allowed into transition. Looking down at the setup now, I must have anticipated staying the night with all that stuff.

MAKING A DIFFERENCE

The homeless epidemic among children is real in every major city in every state in the U.S.  It is heart wrenching to meet these most innocent victims of circumstance who do not have their own room, bed or special pillow to call their own.  It is our duty as human beings to pause for a moment in our routines and do what we can to give back.  Each one of us has a voice.  Let’s work together to make a difference.

PRE-WORKOUT SNACK

My all-time favorite post-workout snack! Trader Joe’s gluten free/dairy free pancakes popped in the toaster, smothered in @wild_friends chocolate coconut peanut butter, and layered with yummy bananas!

HEALTHY PROTEIN BARS

Healthy. Delicious. Protein. Bars. Enough said.
1/2 cup vanilla flavored protein powder
2 TBS coconut flour
1/2 cup creamy almond butter
2 TBS smooth peanut butter
4 TBS coconut oil
2 TBS maple syrup
2-3 TBS chocolate chips for melting
1. Combine protein powder and coconut flour in mixing bowl. Set aside.
2. In a small pan over medium heat, add almond butter, peanut butter, coconut oil, and maple butter until smooth. Remove from heat and pour into dry mixture.
3. Place chocolate chips in microwave safe bowl and nuke until melted. Mix periodically.
4. Drizzle and spread chocolate over fudge. Place in freezer for 30 minutes.
5. Remove from freezer, cut into preferred size, and store in fridge. ENJOY!

GREEK YOGURT BARK

A favorite sweet tooth snack with a healthy twist: Greek yogurt bark filled with blueberries, strawberries, coconut flakes, pretzels, dried apricot, and drizzled with dark chocolate, then frozen to perfection!

YUMMY COCONUT MACAROONS

Delicious 6 ingredient coconut macaroons: Gluten-free, vegan, and dairy-free! The use of coconut oil improves skin health and brain function. #SnackingwithTeamAriana
7 oz (3cups) unsweetened shredded dried coconut
1/4 cup unsweetened cocoa powder
1/4 tsp salt
1/2 cup maple syrup
2 tbs virgin coconut oil, melted
2 tsp vanilla extract
1.Preheat oven to 325 degrees. Line a baking sheet with parchment paper.
2.In a food processor, shred the coconut until consistency is as desired. Place coconut, cocoa powder, and salt in bowl. Add maple syrup, oil, and vanilla. Stir until combined.
3.Form into balls. Bake for 20 minutes.
4.Drizzle melted chocolate and top with pistachios for decoration.

GLUTEN FREE CHEX MIX

Cheerios, rice/corn Chex, gluten free pretzels, Fritos, almonds, and cashews + homemade tabasco/worcestershire sauce. Bake for 2 hours and voila!

POST-WORKOUT RECOVERY SNACK

Who said fudge was only a dessert? This recovery fudge is definitely my new favorite post-workout snack.
Place 1/2 cup almond butter, 2 tbs peanut butter (optional), 1/2 cup protein powder, 1/3 cup coconut oil, 1/4 cup cocoa powder, 1/4 cup pure maple syrup, 1 medium-sized banana, 1 tsp vanilla, and 1 tsp cinnamon in a blender and blend until smooth. Fold in 1 cup quinoa puffs.
Divide mixture among approximately 24 mini-muffin cups, or an ice cube tray. Sprinkle 1 tsp flaky salt (i.e. fleur de sel) over tops. Place tray in freezer until set, about 1 hour. The fudge cups will remain fairly soft and won’t freeze solid. Unmold fudge cups and keep in an airtight container or zip-top bag in the freezer for up to 1 month.
