Gluten Free Lemon Bars

Lemon bars… a slight tang, plus the crunch of a good crust… is there anything tastier?! To be honest, my family devoured these bars before I was able to get a good picture of them! Image courtesy of ABakingMoment.com.

Crust:

1.5 cups almond flour

6 TBS sugar

2.5 TBS cornstarch

1/4 tsp salt

5 TBS cold butter

Filling:

4 eggs

1 cup sugar

1 cup lemon juice

Zest of a full lemon

3 TBS cornstarch

A pinch of salt

 

Preheat oven to 350 degrees F. Lightly grease an 8×8 glass pan.

For the crust, incorporate all dry ingredients and cold butter. Firmly press the crust into the glass pan. Bake for 9 minutes.

For the filling, incorporate all ingredients and whisk until smooth. Pour over crust and bake for 25 minutes (or until the edges are golden brown).
