This thick crust, chewy filling and buttery crumble combine to make the perfect combination.
For the filling
2 cups chopped dates
1 cup water
1/2 cup sugar
For the crumble layer
3 cups gluten free rolled oats
3 cups gluten free flour
2 cups brown sugar (loosely packed)
1 tsp baking powder
1 1/2 cups unsalted butter
1. Preheat oven to 350 degrees F. Place filling ingredients in pot over heat. Boil and stir constantly. Continue until gelatinous consistency is attained. Do not burn!
2. Mix crumble layer ingredients until well incorporated. Press two-thirds of the of the crumble into the bottom of a greased 9″ x 13” pan. Bake for 12 minutes.
3. Remove from oven. Pour date filling on top of the freshly baked bottom layer. Sprinkle remaining crumble on top. Bake for 30 minutes.
4. Allow bars to cool before cutting into squares.
