Delicious 6 ingredient coconut macaroons that are gluten free, vegan, and dairy free! Coconut oil helps improve both skin health and brain function.
7 oz (3cups) unsweetened shredded dried coconut
1/4 cup unsweetened cocoa powder
1/4 tsp salt
1/2 cup maple syrup
2 TBS virgin coconut oil, melted
2 tsp vanilla extract
1. Preheat oven to 325 degrees. Line a baking sheet with parchment paper.
2. In a food processor, shred the coconut until consistency is as desired. Place coconut, cocoa powder, and salt in bowl. Add maple syrup, oil, and vanilla. Stir until combined.
3. Form into balls. Bake for 20 minutes.
4. Drizzle melted chocolate and top with pistachios for decoration.
